What's the optimal hiking grade?

What exactly is the optimal hiking grade? In other words, is it better to take the steepest grade to the top of a mountain in order to reach the summit in as little time as possible, or should you take the longer route that has a more gradual rise to the top?

These questions were answered using statistical data from 50 hikes from a blogger with a PhD in biomed engineering, and who is also studying biomechanics of human movement and exercise physiology. His blog is called Hiking Science. Unfortunately he doesn't blog all that often, but he has some very interesting topics.
